Blowfly Corner

Ingredients
12 | Extra large green prawn tails |
2/3 bunch | Spinach white stalks removed |
2 rashers | Bacon |
1 | Egg |
1/3 cup | Fresh bread crumbs |
Salt and Pepper to taste | |
1 cup | Plain flour |
½ cup | Cornflour |
1 stubbie | Beer |
Vegetable oil for deep frying |
Directions:
1. Peel prawn tails leaving tip in place and devein cutting 3/4 way into prawn to give plenty of room for stuffing.
2. Steam bacon for about 10 minutes then roughly chop and set aside.
3. Blanch spinach for 1 minute in boiling water then remove and refresh in cold water.
4. Place spinach, bacon, egg, breadcrumbs, salt and pepper in a processor and mix into a slightly coarse well mixed stuffing.
5. Lay prawns cut side up and press stuffing in firmly with your fingers then set aside in fridge to set a little.
6. Mix the two flours together in a bowl then add beer, whisking to form a batter.
7. Heat oil in a wok and when hot dip prawns carefully in batter with stuffed side up and then deep fry about 6 at a time.
8. Serve with chips, salad and some lemon wedges.
